Lamb Chop, Shrimp and Grits Recipe

Ingredients:

For the Lamb Chops:

• 8 lamb chops
• 2 tablespoons olive oil
• 4 cloves garlic, minced
• 1 tablespoon fresh rosemary, chopped
• 1 tablespoon fresh thyme, chopped
• Salt and pepper to taste

For the Shrimp:

• 1 lb large shrimp, peeled and deveined
• 2 tablespoons butter
• 4 cloves garlic, minced
• 1 teaspoon paprika
• 1/2 teaspoon red pepper flakes
• Salt and pepper to taste
• Fresh parsley, chopped for garnish

For the Grits:

• 1 cup quick-cooking grits
• 4 cups water
• 1 cup heavy cream
• 1 cup sharp cheddar cheese, grated
• 2 tablespoons butter
• Salt and pepper to taste

Instructions:

Preparing the Lamb Chops:

1. Marinate the Lamb Chops: In a bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper. Rub the mixture all over the lamb chops. Let it marinate for at least 30 minutes.
2. Cook the Lamb Chops: Heat a large skillet over medium-high heat. Add the lamb chops and cook for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove from the skillet and let them rest.

Preparing the Shrimp:

1. Cook the Shrimp: In the same skillet, add butter and melt over medium heat. Add minced garlic, paprika, and red pepper flakes. Cook for about 1 minute until fragrant.
2. Add the Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook until the shrimp turn pink, about 2-3 minutes per side.
3. Garnish: Remove from heat and sprinkle with fresh parsley.

Preparing the Grits:

1. Cook the Grits: In a large saucepan, bring 4 cups of water to a boil. Add a pinch of salt, then slowly whisk in the grits.
2. Simmer: Reduce the heat to low and cook, stirring occasionally, until the grits are thickened and creamy, about 5-7 minutes.
3. Finish the Grits: Stir in the heavy cream, cheddar cheese, butter, and season with salt and pepper.

Assembling the Dish:

1. Plate the Grits: Spoon the grits onto a large serving platter.
2. Top with Shrimp: Arrange the cooked shrimp on top of the grits.
3. Add the Lamb Chops: Place the lamb chops around the edges of the platter.
4. Serve: Garnish with additional chopped parsley and serve immediately.
