I have personally never seen Red Snapper eaten or on a menu anywhere in Africa. From my experience the people of Africa eat Tilapia most by far. Red Snapper isn't even generally caught off the coasts of Africa, but are found more in the US Atlantic, the Gulf of Mexico and Caribbean Sea. Now if we were talking about Central America, oh hell yeah, Red Snapper is the catch of the day!

They have it all over the coast, The Gambia down to Nigeria. Some are huge

Never been up that way. All I saw on menus in Ghana was Tilapia, In Belize Red Snapper is served at just about every sit down restaurant in the country. But they're rarely adventurous in it's preparation. Deep fried, head on, tail on with squares cut into the sides and Marie Sharpe's hot sauce. If the Covid nightmare ever relents, my next trip will be Senegambia for sure.
