Caribbean Fry Bake with Saltfish Buljol
Ingredients:
For the Fry Bake:
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
Water (enough to make a soft dough)
Oil for frying
For the Saltfish Buljol:

1 pound saltfish
1/2 cup chopped tomatoes
1/2 cup chopped onions
1/4 teaspoon black pepper
3 tablespoons olive oil
1/2 cup chopped scallion
Directions:

To Prepare the Fry Bake:

Mix the flour, baking powder, and salt together in a large bowl.
Gradually add water to the mixture, stirring until a soft dough forms.
Knead the dough for a few minutes, then let it rest for 30 minutes.
Divide the dough into 10 equal portions and roll them into balls.
Allow the dough balls to rest for 10 minutes.
Heat oil in a pan over medium-high heat.
Once the oil is hot, reduce the heat to medium-low.
Flatten each dough ball and fry until golden brown on both sides.
To Prepare the Saltfish Buljol:

Place the saltfish in a bowl of water, ensuring the water covers the fish. Let it soak for 15 minutes, then drain and refill with fresh water. Soak for another 15 minutes. If the fish is still too salty, repeat the process. Alternatively, use the boiling method (see Notes).
Flake the saltfish into small pieces.
In a bowl, combine the chopped tomatoes, onions, black pepper, and olive oil.
Add the flaked saltfish and chopped scallion, mixing well.
Serve the saltfish buljol inside the fried bakes.
