once it’s cut I’ll upload some more pics...I should’ve added more of the japanese style bread crumbs...I topped it off w/ a lot of regular bread crumbs but the grains are really small and went right into the cheese

Your texture looks amazing.

That is one thing that mine was missing was that creamy texture on top.

I will sub my cream for evaporated milk.

ya it’s mostly for show...between the shrimp and the cheese you can barely taste the breadcrumbs...I like the bacon topping that @thismybgolname used...I’ll try that next time
man i should have taken pics of the turkey i smoked. put it in the pit around 11pm and let it slow smoke til 5:30am.
i was back and forth out there every 30 minutes to rotate it.....so yeah im sleepy as fuck right about now.
the cayenne pepper i put in the brine really set that shit off. came out juicy and delicious as fuck.

now my banana pudding........had my family members slapping the fuck outta each other.....

Before I posted, the used a spoon to get a bit of oil from the top. Not a whole lot, but maybe half an ounce. I spooned it out to make a better picture

its similar to this one. and since i had my charcoal and apple wood all on one side and my turkey on the other,
one side of the turkey nearest the coals would cook faster than the other side would. so i just kept rotating it every 30 mins or so,
so that each side of the turkey could cook proportionately. im glad i did it that way, because it came out perfect.

Cream cheese is better for your cheese sauce than sour cream. It adds lots of "bite" to the cheese. Plus it's creamy and makes the texture moist. Also, season your cheese sauce with a lil garlic and onion powder. Adds great flavor.

I just realized I"m going to have to clean this glass dish that I cooked this in

I learned years ago to use foil pans for as much as I can. The only thing I cook in regular cookware is the turkey and pies if I make my own crust, and I line the roaster I use for the turkey in foil. We don't have company where I have to worry about having cute serving dishes. If it comes to that I can transfer to a dish where at least the food isn't baked on.

Soak it and tackle it with a brush and it won't be too bad.

These pics don't mean nothing until we see what's under the top. Some of yall got too runny or too dry mac and cheese. That's about as important the type of cheese you use.

How do you make your home made macaroni and cheese and what type of cheese do you use?

I'm looking at potentially having to spend at least 30 dollars on the cheese and wanted to get some pointers before I try my hand at this for the holiday.

Army and Lou's has a recipe that I use...

I guess that's a soul food joint that has legendary Mac and cheese. I loosely follow those directions, but that shit is the TRUTH

The 25 cheese Macaroni and Cheese was a huge success at my girlfriends parents house. With the cheese I have left over I'm going to make macaroni and cheese in the smoker. I heard it's real good that way

Wow, I'm SHOCKED by some of these methods of cooking Macaroni & Cheese
I live in NYC , My Mother learned from my Great Grand Mother who was from Virginia
Although I add an extra flavored Cheese now the FOUNDATION is the same

1 Cracker Barrel - Sharp
1 Cracker Barrel - Extra Sharp
1 Monterrey Jack - Plain
3 Room Temperature Eggs
1 Can of Evaporated Milk (I also use 1/2 can of condensed sometimes for sweet taste WITH the evaporated milk) WINNER!!!
1/2 Stick of Butter
Pepper
Olive Oil
Salt

Bring nicely SALTED water with 3 Table Spoons of Olive Oil to a Boil, add pasta. stir it occasionally.
Drain, melt butter over pasta (in drain)
Empty in a baking dish
Add Milk, whisked eggs and mix then add Cheese... GRATED CHEESE . Mix in well.....

Bake at 350 Degree till slightly brown on top (usually 30-45 minutes in preheated oven)

I was in line buying cheese for my mac & cheese dish and the lady ringing up my groceries (also got a cheese grater) asked me what I was making.

I told her what I was making and the bagger chimed in talking about how you know someone can make good mac n cheese by how much they spent.

The lady behind me tapped me on my shoulder and asked me if I would save her some.

She ended up giving me her number.

Not the cute at all but her body was on point.
