I have four eggs left in the fridge and I only use them for baking and thickening up tofu breakfast scrambles.
Once they are gone I'm done. Not going to risk my health or my wallet to eat like everyone else.
Instead, I have a jar full of dried mung beans and have been searching YouTube for egg replacement recipe videos. For baking I'm using 1/3 cup of applesauce instead.
