Was never into lamb, due to its gamey taste. However; I got some lamb chops for some OT guests coming through, and did a similar thing, scoring & seasoning the meat, pause. I seasoned the 1st set with curry seasoning, grilled it, then based it down in a sauce and made a Curry lamb chop. The next night, I seasoned the chops with jerk seasoning. Both of them slapped & are now my go to methods with lamb.This more of my speed.
