Gut it, scale it and stuff it with some jerk seasoning, wrap it in some foil and cook on the oven and then finish it under the grill to crisp up the skin.

When I lived in Florida....I used to hate these things.
We used to call them mudfish. Didn't know anyone who would dare to eat them.

if you havent tasted it yet.....i recommend Texas Redfish...................(its best if its blackened). that is some good ass fish man.
