When you cook a steak to well done you're burning out all the enzymes and proteins and are kind of defeating to point of eating the steak.

If you've ever gone down on a woman then a lil pink/pearl shouldn't scare you away.

I'm not gonna try to convert the "Fucking ruineds". To each their own and what not. But if you feel up to it one day, try a medium steak vs a well done steak from a steakhouse or somewhere that can actually cook steak (e.g. Not Applebee's). You could be missing out. Then again, maybe you've already tried...

for me Charred Med Rare .......let some butter soften then chop up some tarragon and some glazed garlic use a whip and mix it together put it back in the fridge to harden ......put the steak a good hunk of Ribeye from the packing company (not no damn grocery store...you should see all the bullshyt they put on meats to make to look fresh) on the grill use a decent set of professional KITCHEN TONGUES about 2 bucks , and not that damn BBQ fork... piercing the meats cause the juices to run from the steak and makes it dry out .... and my last tip meat will tell you when its ready to be turned if it sticks to the grill its not ready to be turned all meat has a release point to be turned it will let you know when to turn it ..... take it off the grill put that tarragon butter on it and sit back and enjoy

I usually buy a ribeye with a decent thickness (1" to 1.5"). If it's straight from the fridge, I set it out on the counter to warm up alil. Then hit it with some kosher salt & pepper. That's it. Maybe some thyme/Rosemary, but I don't want to murder the flavor of the meat as the fat is what gives the ribeye it's great taste.


From there, I usually pan sear it (cast iron or stainless steel). Just remember to get that pan hot. If I'm using cast iron, I throw it in the oven for a few @ 400. If using my all clad, I heat it on the stove top. Then I drop a lil bit of oil in the pan (oil with a high smoke point). Toss the steak in and Give that nice crust after about 3 to 4 minutes (whenever the steak can be wiggled free from the pan w/O much effort) . From there, just make sure to render the fat on the side of the steak, flip it and cook it through to the desired temp. I like to spoon alil bit of butter over the steak as well. I Usually pull the steak from the heat once the thermometer hits 125 ish or so.

I hear folks are really into sous vide. That's next for me.

Ehhhh. I've never seen da sous vide technique used for steaks. I'm indifferent about that technique in general.

I'm not well versed in the subject. But the technique used an immersion circulator (fancy water heater?). Basically season the steak, zip lock or vacuum seal it, place in a water bath w/ the immersion thingy. Then you can cook it at the exact temp you desire. You'll still need to pan sear/grill/blow torch it for the crust. Here's a comparison between that and the traditional way.

Cannibals have been known cook their food too. I'm still having a difficult time trying to understand why Rare = cannibalism when it comes to beef, in your mind.

I'm right at wait... I won't lie I used to be one of those well done people until I finally let someone convince me to try it medium. Never went back.
