I'm a couple of years younger than you, last weighed in at 192 and 3 mile runs are my thing... I had a 7:59 today and a 7:39 yesterday.
(The zone minutes discrepancy is because my phone tracked it today but my watch died mid-run.)
I wonder if I could hit 7:00 if I tried my hardest. I never sprint-- My main goal is to get through the whole 3.5 miles or so without walking at all, which I've been failing at lately.
I think I'd probably do much worse overall if I got closer to 7 but I might give it a shot one day this month. I value my overall time most-- today's 8:39 average with a slower top time beats the hell out of 9:11 yesterday with a slightly better start.

I worry about pushing myself too hard because I don’t want to get injured. Recently, I have upped my mileage to a 10k and making sure to complete that under an hour.
I see you like to burn you calories to star off. I do my fastest running on the last mile of my runs.
If I did what you are doing, I’d never complete my runs. Lol. My energy would be too depleted and I would definitely would be at a higher risk of injury.
