sac-a-lait aka crappie, bass, perch
Marsh/saltwater - redfish/red drum, speckled trout, drum
choupie is my the favorite, with some red beans gotta have a little hit of Louisiana hot sauce to sprinkle on it
then my next choice is redfish

for as the fish, Choupie meat is a very sensitive meat. When u have it, I’d say it’s fair fresh. We normally keep that fish alive, then knock it out before we clean. The meat is soft textured, it can get mushy.
very few people have master ways of freezing it. U will always see sign saying “live choupie for sale”
now we do make patties or balls from the meat, but the meat is cooked
Now Redfish is stored like any other meat.
I’ve prepared or tasted redfish a number of ways fried, baked, sauté and in a broth(my trini homeboy turned me on to this)
Sauté and placed over hot creamy buttery grits is almost a phenomenal dish but it’s hard for me to put redfish over shrimps when it comes to grits….
I haven’t made a broth yet, but likely will this weekend…
but yes you can fry both and have a wonderful time…

Just got back from Medellin Tuesday! Had a blast again.
Costa Rica over Puerto Rico mayne. If you taking your girl stay in the Liberia area. I did a 3 hour ATV tour through some rainforest, villages, rivers and saw some amazing shit. Get out and see the Rio Celeste waterfall shit looks amazing in person like it does on pics. The rain forests in Costa Rica shit on the El Yunque rain forest in Puerto Rico.Take a day trip to Nicaragua.
Now if you not taking your old lady then stay in San Jose area.
Food is great, people are friendly as fuck, there are some dope ass Mayan Ruins to check out. If your into water one of the biggest barrier reefs in the world are off the coast. Plus the Blue Hole.

Portugal was dope, Lisbon specifically where we went. I was skeptical at 1st if I would like the vibe given their slave trade history but I left impressed. Its probably the most friendliest European country towards black folk I've visited so far. Now I see why black folks are moving there.
The food was real good & I recommend a black restaurant there called Sofia's place
